Canteen British Restaurant @ Royal Festival Hall, Southbank Centre

日本に帰ると、「イギリス料理は不味いの？」と聞かれることが非常に多いのだけれど、ガストロパブ（おいしい食事を提供するパブ）やセレブ・シェフの流行もあって、材料にこだわった、美味しくて洒落たブリティッシュ・レストランが増えている。Canteen（カンティーン）は、私たちが好きなブリティッシュ・レストランの一つ。「Canteen」は、学校やオフィス、軍の基地等にあるカフェテリア/レストランを意味するイギリス英語で、学食や社食を指す。ロンドンに現在4軒あるけれど、私たちがよく行くのは最寄りのSpitalfields店と、BFIでの映画やコンサートの際に立ち寄る、サウスバンクのRoyal Festival Hall店。

メニューは伝統的イギリス料理のパイやロースト料理、シチューやオーブン料理、魚料理、ソーセージ＆マッシュ等。フェアリー・ケーキ（カップケーキ）やヴィクトリア・スポンジ（スポンジ・ケーキ）等、デザートもイギリス風。Free Range（放し飼い）で育てられた添加物不使用の肉類や、南海岸から直送された魚等、新鮮で厳選した主に国産の旬の食材を使った気取らないイギリス料理と、リーズナブルな値段で人気、その味はメディアや批評家からも高い評価を得ている。ちなみに昨日見た、豚の飼育や虐待に関するドキュメンタリー「True Stories: Pig Business」によると、イギリスのAnimal Welfare（動物福祉）に関する規制はヨーロッパでいちばん厳しいそう。動物愛護に熱心なイギリスでは、そうした家畜の福祉に配慮したレストラン（特にブリティッシュ）をよく見かける。Canteenもその一つで、家畜を人道的に扱う農場から肉類を購入しているという。

また、Very Good and ProperやWindmill Furniture等ブリティッシュ・デザインの家具を使った、シンプルかつモダンで暖かみのあるインテリアは、WallpaperやTime Out誌の2006年ベスト・レストラン・デザイン賞候補になった。また、24ページの店紹介の冊子（写真下）もスタイリッシュにデザインされていて、もらう価値あり。

Incredibly, so many people from abroad believe that British food is bad. Due to the popularity of gastropubs and celebrity chefs, there are a wave of cool and delicious British restaurants using good quality ingredients in UK recent years. Canteen (“a cafeteria/restaurant at school, office or military base,” in British English) is one of our favorite British restaurants. Canteen has four branches in London, and we sometimes go to the nearest Spitalfields restaurant and the Royal Festival Hall branch in Southbank Centre when we go to a concert or a movie at BFI.

The food at Canteen is traditional British; pies, roast, stew, bakes, fish, and sausage & mash etc. The desert is also good old British treats, such as fairy cakes (cupcake) and Victoria sponge (sponge cake). All their meat is free range and additive free, and their fish is delivered directly from south coast of England. With their unpretentious food using fresh and mainly domestic ingredients from selected sources, and with its reasonable price, Canteen is very popular among Londoners and is also highly regarded by media and food critiques. I saw yesterday a documentary “True Stories: Pig Business” about pig welfare in some farms abroad (USA and Poland), and I got to know that the British regulation on animal welfare is the strictest in Europe. In general, British are passionate about animal right and welfare, and I’ve seen many restaurants, including Canteen, expressing their values in better life for farm animals and using free range and/or organic meats.

Canteen’s simple and modern but also warm interior, using British design furniture from Very Good and Proper and Windmill Furniture, is also highly recognized, and Canteen was nominated for “Best Restaurant Design 2006” by Wallpaper and Time Out. Their 24-page information booklet (photo below) also stylishly designed, and worth to get a copy.

Farm | UK farm sourced food @ Cowcross Street

ここ近年、イギリスでもオーガニック・フード、Free Range（家畜の放し飼い、動物愛護に熱心なイギリスらしい）食品、また地球温暖化防止のため配送にかかるCO2排出量が少ない地元産の食材の需要が高まっており、スーパーに並ぶ食品はもちろん、カフェやレストランでもこのトレンドを取り入れているところが増えてきた。PIADAのすぐ近く、SmithfieldのCowcross Streetに最近出来たカフェ／デリ、FARMもその一つ。こじんまりとして暖かみのあるレンガ壁の店内は、毎朝手作りされる、食品添加物なしの、サンドイッチ、サラダ、スープ、パイ類（イギリス料理。甘くない、おかずパイ）、フィッシュ・ケーキ（魚のすり身を使ったコロッケのようなもの）等フレッシュなブリティッシュ・フードが並ぶ。コーヒーを除く食材は、その栽培方法、家畜の場合は飼育方法によって、オーナによって厳しくセレクトされたイギリスの農場から仕入れており、その食べ物の産地はメニューに記されている。FARMはCHICKSという恵まれない子供のための慈善団体に協賛しており、利益の10％が寄付される。美味しいものを食べて、環境にも健康にも良く、動物愛護や社会貢献もできる。出来すぎたカフェだ。

In recent years, the popularity of organic , free range (very British who care about animal welfare), and locally sourced food (to cut the food miles) have gone up, and not only supermarkets but also more cafes and restaurants get on with this trend. FARM on Cowcross street in Smithfield, just around the corner from PIADA. Small but warm inside with brick walls filled with fresh British foods such as salads, sandwiches, soups, hot pies (savory pies), fishcakes. Their ingredients, except coffee, are UK farm sourced by them based on how the livestock was bred, fed, reared, and produced, and how the produce is sewn, grown and brought to town – you can see where the food came from on the menu.  Their foods contains no nasties or preservatives, are made fresh every morning by them. Farm also created the Farm Foundation and has partnership with CHICKS, a charity for disadvantaged children, and the 10% of the profits goes to the charity. Eating tasty healthy meal does good to environment, animal welfare, and helps children – doesn’t it sound great?

Dogs Trust: Dog’s Welfare Charity

犬大好きの私だが、アパートの家主がペット禁止だというのと、Mが犬の福祉のため都会で飼うべきじゃないとの信念？の持ち主なので、飼わしてもらえない。それで、少しでも犬の役に立ちたいと、Dogs Trustという犬のチャリティーのスポンサーになった。この制度は、病気や障害、対人恐怖等何らかの事情で里親にもらってもらえずシェルターに暮らしている犬を１匹選んで、金銭的にサポートするもの（週１ポンド）。私はもしかして会いにいく事もあるかもしれないと、West LondonセンターにいるShaneという犬を選んだ。スポンサーになっていると、写真にある「Wag!」という季刊誌の他、折々「Shane」からも、近況を知らせてくれるグリーティングカードが届く。Dogs Trustは、１８９１年に設立されたNCDL（National Canine Defence League）を前身とする、イギリスで歴史ある犬の愛護団体。虐待された犬や捨て犬の救助・保護、里親探し、犬の福祉向上等の活動を行う。「A Dog is for Life, not just for Christmas（犬はクリスマスプレゼントじゃなく、一生もの）」がスローガンで、心身ともに健康な犬は、殺処分しないがモットーだ。全国に17のRehoming Centre（犬を保護しているセンター）を持ち、昨年は１万匹以上の犬が里親にもらわれていった。

イギリスは、動物愛護運動が盛んだ。RSPCA（Royal Society for the Prevention of Cruelty to Animals：王立動物虐待防止協会）は、世界最古で最大の動物福祉で、イギリスで最大級のチャリティ団体だ。また、研究所等に忍び込み実験用動物を「解放」したり、実験に関わる人を恐喝したりする過激派「アニマル・テロリスト」もよく紙面を賑わせる。１月には７人の活動家が恐喝で実刑判決を受けたという記事を読んだ。日本では、年間何十万もの捨てられたペットが保健所で殺処分になるそうだが、そんなことしたらイギリスでは恐らく暴動ものだろう。また日本では、子犬・子猫以外は里親にもらわれないみたいだが、こちらは年寄りや病気、障害を持つ動物たちの里親に進んでなる人も多い。やはり人権意識の強いイギリス人は、動物の権利も尊重するのだろう。日本でも、飼い主がもっと責任を持ってペットを飼い、殺処分される動物たちが減るように祈るばかりです。

I really love dogs but I cannot have one, because our landlord doesn’t allow a pet in our apartment, and M believes that we shouldn’t have a dog in a city for dog’s sake. In order to give a little love for dogs, I became a sponsor for dogs which cannot be rehomed for some reasons. You can become a sponsor for one dog by paying £1 a week, and I picked Shane at the West London center, which is the only one in London, so that I can visit her if I want. Sponsors receive their quarterly magazine ‘Wag!’ and occasional greetings from your sponsored dog to notify us what it is doing. Dogs Trust, founded in 1891 and formerly known as the NCDL (National Canine Defence League) , is an animal welfare charity which specialises in the wellbeing of dogs. The charity provides kennels for abandoned  or disowned dogs, rehomes them, and also works for the welfare of dogs. With its slogan ‘A Dog is for Life, not just for Christmas’, Dogs Trust ensures that no mentally and physically healthy dog taken into the protection of the rescue/re-homing centres shall be destroyed.  It has 17 rehoming centres around the UK, and found new homes for over 10,000 dogs last year.

The animal right activities are very popular in UK. RSPCA (Royal Society for the Prevention of Cruelty to Animals) is s the oldest and largest animal welfare organisation in the world and is one of the largest charities in the UK. You hear all the times in the media about ‘animal terrorism’ attacking research labs doing animal testings, and ‘rescuing’ animals for experiments.   In January, I read the article that 7 animal rights activists were sentenced to jail. In Japan, 340,000 abandoned dogs and cats were killed in 2006 at public health centers. If the same thing happen here, it will be a riot! Also only ‘cute’ pups and kittens are adopted in Japan, but some British are willing to take old, sick or disabled dogs to their home. British, who have a strong sense of human rights, also care about animal rights. I hope there are more people responsible for your pets in Japan so that less animals will be put to sleep.
